Area: Veneto, in northern Italy. Di Paolo are based in Trebaseleghe, where the provinces Treviso, Padua and Venice converge
Grape Variety: 100% Glera (the relatively new name for the Prosecco grape)
Producer: The family-owned company is nearly 100 years old but were, until recently, only grape growers rather than winemakers
Food Match: Who said anything about food?
Old Bridge Rating: Half the pressure of Champagne, sealed with a crown cap (and a very dinky swing-top stopper if by chance you don't finish it in one go). This soft, off-dry, gently sparkling style is in fact how Prosecco was originally conceived. No need for a celebration at this price
