2009 CHABLIS, 1er Cru Montmains, Jean-Paul Droin
Alcohol Percentage: 13%
Area: Chablis is a cool, northern area. Despite commercial popularity the wines are not 'easy'. Initially they seem light and innocuous, with searing, razor-sharp acidity. Give them air, and allow the palate a minute to adjust, for the subtle intensity and complexity to become evident. Montmains is one of the best 'Premier Cru' vineyards
Producer: Jean-Paul Droin has a shiny, modern winery but takes a very flexible approch to winemaking. Depending on the vineyard, he may or not use oak, or malolactic fermentation (sometimes induced to soften acidity). He has 25 hectares spread across 15 different appellations
Vintage: 2009 Warm year of relatively early-drinking wines. This will be approachable early and should be at its very best around 2014
