Alcohol Percentage: 12%
Area: Billecart-Salmon are based at Mareuil-sur-Ay, just north of Epernay
Grape Variety: Two thirds, Chardonnay, a third Pinot Noir. 13% of the total comes from red wine (also Pinot Noir) added after to the blend to achieve the appropriate pink colour
Producer: The estate is run by the seventh generation of the family - Francois Roland-Billecart. The whole business is geared to quality not quantity
Cellar Potential: I like Billecart Rosé as young as possible. Or keep it for 2 years to develop chocolate and coffee overtones
Old Bridge Rating: Which smart restaurant doesn't list Billecart Salmon Brut Rosé? Those in the know would all agree it has for some time been the most consistently excellent pink Champagne.

Press Reviews: The important wine magazine 'La Revue du Vin de France' tasted all the great names of Champagne in December 2010. Billecart-Salmon came top of the rosé wines, some way ahead of Bollinger, Taittinger, Veuve Clicquot etc. The Brut won its category too
