FOOD MATCH; STRONG (STINKY) CHEESE
Here we are thinking of strong soft cheeses (Camembert, Brie or any of the French stinky varieties) which are best with ultra rich or semi-sweet whites - Alsace Gewurz or Pinot Gris being the obvious choices. If it must be red, go for something with lusciousness, almost to the point of sweetness. Strong, hard cheese (mature Cheddars, Pecorino, Parmesan) can work with a variety of serious red wine - so just stick with the red from your main course or move onto Port. Blue cheese needs sweet wine or Port. |
