Area: Saint-Véran is a village in the heart of the Mâconnais, in southern Burgundy - the second in the area (after Pouilly Fuissé) to be given its own Appellation. Terres Noires is a single vineyard on the south side of the landmark rock of Solutré, with limestone mixed with black decomposed rock.
Grape Variety: Chardonnay, one third matured in oak barrels for four months.
Producer: Domaine des Deux Roches is one of the very best Mâconnais estates, owned by two families, Collovray et Terrier.
Cellar Potential: Ready now, but will keep 5 years from vintage.
Food Match: This has the richness and depth to match chicken, pork and veal, as well as fish and salads (of course). Simple roasts chicken might be best of all.
Old Bridge Rating: Is this a perfect Saint-Véran? Old vines and careful use of oak have made for a wine that is clearly a big step up from the average Mâcon, but without losing the drinkability that is key to the style.
