Area: Chablis is a cool, northern area. Despite commercial popularity the wines are not 'easy'. Initially they seem light and innocuous, with searing, razor-sharp acidity. Give them air, and allow the palate a minute to adjust, for the subtle intensity and complexity to become evident.
Côte de Léchet is a Premier Cru vineyard about 1 km west of the town of Chablis, near the village of Milly. It's a steep, mainly south east facing slope, hence the extra ripeness compared to a normal 'village' Chablis.
Grape Variety: 100% Chardonnay, 75% fermented in stainless steel tank, 25% fermented and matured in small French oak barrels (1-6 year old wood), for one year.
Producer: Les Hauts de Milly is owned by Didier Defaix and Hélène Jaeger-Defaix, who have vineyards in both Chablis and Rully (in the Châlonnais, further south). Their winery is in the village of Milly. In the Chablis region they have 27 hectares of vines spread through many small plots. Even for this wine, they have 25 different plots (amounting to 9 hectares) within the Côte de Léchet.
