Area: Chablis is a cool, northern area. Despite commercial popularity the wines are not 'easy'. Initially they seem light and innocuous, with searing, razor-sharp acidity. Give them air, and allow the palate a minute to adjust, for the subtle intensity and complexity to become evident.
A quotation from their US agent:
"The domain has nearly thirty acres of these vines, classed as Petit Chablis because the limestone tends to be the younger Portlandian rather than the older Kimmeridgian, and as such typically occupies higher sites (ie, resting on top of Kimmeridgian) and has less clay. Pierrick is convinced that the authorities didn't do systematic soil samples and that his largest parcel of Petit really ought to be classed as Chablis—it makes wine like Chablis and indeed is surrounded by AOC Chablis vines."
Producer: From their agent, Flint Wines:
"Young Pierrick Laroche set up on his own about five years ago but has quickly made a real name for himself. Initially he sold off a large proportion of what he was producing from his 25 hectares (good for cashflow) but now such is the demand for his wines he is being encouraged/forced to bottle much, much more under his own label, which is great news. His wines are aged in mainly stainless steel, although he does use some oak for textural purposes. He likes a long élevage as this adds nuance and complexity without the wines being forced or hurried. As a range they have a lovely mineral core running through them, which keeps them energetic and vivacious."
