Today the Collet family own over 37 hectares spread between Village, Premier, and Grand Cru sites, all formally under conversion to certified organic farming.
The Montmains parcel is 6.5 has in size, on the left bank of the River Serein on the southerly facing slope. Here the Chardonnay is grown on deep Kimmeridge chalky clay limestone soil.
The Collet family have been farming in Chablis since 1792 and the present Domaine name was adopted in 1952 after Jean Collet. Historically they sold their grapes to négociants, but Jean was the first Collet to start making their own wines. In addition, he cleverly set about purchasing selected parcels of vines as they became available. In 1979 Jean’s son Gilles joined the firm with his wife Dominique – and now their son Romain has also joined the business (in 2008).
The Montmains is a very forward and expressive Premier Cru, so much so that the Domaine ferments and ages the wine solely in stainless steel tanks (no oak) with local, natural yeasts. It is aged in tank and bottle prior to release.
After the extensive frost damage vintage of 2021, the Domaine lost over 80% of its production, but the actual harvest in the end has produced a classical Chablis style – crisp, elevated acidity, purity of (stone) fruit, and minerality.
This wine is ready to drink now but can be kept and enjoyed over the next 2-3 years.
