Area: A 50 hectare estate in the central Médoc, just to the south of St Julien. Ste Gemme is a derivative of St James, a local parish, and Carona is a nearby spring. Records go back to 1648, owned by the Borie family since 1900. The vineyards are on a typical gravel plateau.
Grape Variety: 65% Cabernet Sauvignon, 30% Merlot, 5% Petit Verdot, aged in oak (20% new) for 12 months.
Cellar Potential: 2019-2025.
Food Match: Classic Médoc like this is at its best with a traditional roast joint.
Old Bridge Rating: Classic claret - dry and serious but brilliant with food.
