Billecart-Salmon are based at Mareuil-sur-Ay, just north of Epernay
Two thirds, Chardonnay, a third Pinot Noir. 13% of the total comes from red wine (also Pinot Noir) added after to the blend to achieve the appropriate pink colour
The estate is run by the seventh generation of the family – Francois Roland-Billecart. The whole business is geared to quality not quantity
I like Billecart Rosé as young as possible. Or keep it for 2 years to develop chocolate and coffee overtones
Which smart restaurant doesn’t list Billecart Salmon Brut Rosé? Those in the know would all agree it has for some time been the most consistently excellent pink Champagne.

The important wine magazine ‘La Revue du Vin de France’ tasted all the great names of Champagne. Billecart-Salmon came top of the rosé wines, some way ahead of Bollinger, Taittinger, Veuve Clicquot etc. The Brut won its category too
