Dauvissat’s ‘Forest’ is from the vineyard others label as Fôrets, it’s right next to Montmains, just west of the town of Chablis.
Vincent Dauvissat is one of the two most sought-after producers in Chablis. Every three star Michelin restaurant feels obliged to list his wines – hence the very high prices. His style is traditional – long-lived wines which are austere in youth but do blossom into nutty, spicy, complex maturity. Having said that, mature Chablis is an acquired taste – the ‘mineral’ flavours that I might wax lyrical about are fairly weird if you haven’t encountered them before.

A notably more complex if more reserved nose offers up classic Chablis aromas that include oyster shell, tidal pool and white flower aromas cut with just a hint of citrus that can also be found on the rich, generous, concentrated and quite powerful medium plus weight flavors that evidence noticeable salinity on the mouth coating, chiseled and impressively persistent finish. 93 points Stephen Tanzer’s International Wine Cellar “Vincent Dauvissat’s fabulous 2009 Chablis La Forest, large-scaled but lively enough to cut through the opulent texture of the tortellini, proved a perfect foil for this rich dish. While it’s still young, I find that this particular vintage offers plenty of early appeal and is drinking quite well now; I doubt I’ll hold on to the bottles resting in my cellar for more than another eight or ten years.” (12/2014)
