Soave comes from the area east of Verona in north east Italy. It’s one of many well-known names in the Italian wine industry that have been tainted by years of over-production and commercialisation.
The best vineyards are invariably those in the rolling hills classified as ‘Classico’ and in the last 10 years there has been an exciting quality revival.
85% Garganega, 15% Trebbiano di Soave; fermented in glass-lined cement tanks, and left on the fine lees until being bottled in the spring.
Pieropan were pioneers amongst serious producers in the area. Even this, their ‘normal’ bottling, combines subtle richness and elegance alongside the clean, light structure that typifies the so many modern Italian whites.
